I know my mom came up with this casserole which is different than any other. She told me she threw together these ingredients one night when she had little else to pick from when my sister and I were small and the cupboards were pretty bare the day before payday. So that's what I started calling it..The day before payday Casserole! The combination of tomato soup and melted cheese reminds me of dipping my grilled cheese in tomato soup! Leftovers are especially yummy. In fact sometimes I think it's even better the second day.

Ingredients For mom's day before payday casserole

  • 12-16 oz
    egg noodles cooked and drained
  • 1 lb
    bulk pork sausage
  • 1/3 lb
    velveeta cheese cut into small chunks
  • 1 can
    family sized can condensed tomato soup
  • 1 can
    small (10-11 oz) can condensed tomato soup

How To Make mom's day before payday casserole

    Cook noodles, drain and set aside
  • 2
    Cook bulk sausage, breaking up as cooking until loose meat till done. Drain off grease and set aside for a moment

    In a large oven proof/microwave proof casserole dish mix soup and cheese chunks.

    Add sausage to soup/cheese mixture and stir. You'll see the cheese starting to melt into the soup.

    Fold in noodles and mix well. Cover and cook for 45 minutes (approx) in 350 degree oven Or cover and put in microwave for 10-12 minutes on full power.
