This is my Mom's recipie,don't know it's origin,but it's a winner!I usually serve it as a quick lunch before a trip to the mall with my girlfriends,served with Bread Sticks and a glass of white wine.And a shopping we will go!!

Ingredients For mom's bleu cheese quiche

3 ozbleu cheese
-
6 ozreduced fat cream cheese

2 Tbspbutter, softened

3 Tbspwhipped cream, unsweetened

2 lgeggs
-
salt and white pepper to taste
-
1/2 Tbspminced green onion tops
-
9 inchfrozen pie crust
-
dashcayenne pepper
How To Make mom's bleu cheese quiche

1Preheat oven to 400*,thaw pie crust for 15 minutes.Prebake it for 8minutes.Take it out,poke holes in the bottom with a fork.Put it back in for 2 minutes.Take it out,lower the oven temp to 375*.

2Blend the cheese,butter and cream with fork,then beat in the eggs.Put mixture through a sieve to get rid of any lumps.

3Season to taste,stir in the green onions.

4Pour into the pastry shell and set in upper third of preheated oven.Bake for 25 to 30 minutes,or until Quiche has puffed and top has browned.
