Meat loaf is the ultimate comfort food. This meat loaf has always been a huge hit with my family or at potluck dinners when taken to share. It is very moist and juicy and tastes absolutely wonderful! I don't add green peppers to this recipe, because my family doesn't care for them, but you can certainly add them if you prefer. I like to serve this meat loaf with cream cheese mashed potatoes, green beans and lots of iced tea (the house wine of the south). Hope y'all enjoy this amazing meat loaf!

Ingredients For mom's amazing meat loaf

  • 1 pound ground beef
  • 1/2 pound ground turkey, sausage, or any other ground meat you prefer
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 small onion, minced
  • 1 egg, slightly beaten
  • 3/4 can cream of tomato soup
  • 1 1/2 cups quick oats, uncooked
  • TOPPING:
  • 1/3 cup ketchup
  • 1 tablespoon prepared mustard
  • 1/4 can cream of tomato soup
  • 2 tablespoons brown sugar

How To Make mom's amazing meat loaf

    Preheat oven to 375 degrees. Coat 9 X 13 casserole dish with cooking spray.

    Mix all ingredients well and place in prepared casserole dish. Shape into loaf. Whisk topping ingredients together and spread on top of meat loaf.

    Bake in 375 degree oven for one hour. Let stand 5 minutes before serving.
