This recipe I made one night for the family to jazz things up from plain tater tot casserole, boy did it go over!

Ingredients For mexican tater tot casserole

  • 1 lb
    ground beef
  • 1 jar
    salsa, chunky
  • 1/2
    onion
  • 1 c
    frozen corn
  • 1 can
    black beans
  • 1/2 bunch
    cilantro
  • 3 1/2 c
    frozen tater tots, enough to cover botton of casserole dish
  • 3-4 c
    shredded peper jack cheese
  • 1
    minced jalapeno ormore to taste
  • 1 clove
    garlic, minced
  • 1
    container sour cream for garnish
  • 1 pkg
    taco seasoning

How To Make mexican tater tot casserole

  • 1
    Spray casserole dish with pam, lay out tots and bake at a pre heated 350 oven while you brown hambeger.

    Brown hamberger with onion, garlic, taco seasoning and jalapeno. After browned, Add beans, corn, cilantro and salsa and mix well.

    Take tots out of oven and place an even layer of chese over them. My family are cheese hoarders so i add more than usuall. top with hamberger mixture and more cheese. Bake at 350 for about 30 min, top with sour cream
