mexican quinoa one pot dinner
This is a great easy and quick one pot meal. It is vegetarian and if you want to make it vegan, just substitute vegan cheese. Everything else is ok. I couldn't believe how great this tasted when it was done.

2 Tbspolive oil

2 tspminced garlic

1 canfire roasted diced tomatoes

1 canfiesta corn or mexi-corn

1 candiced green chilies
-
1 canblack beans (drained and rinsed)

1 csliced black olives
-
1 cquinoa uncooked - i used multi color
-
1 cvegetable broth
-
4-5 stalkgreen onions sliced (including the greens)

2 cshredded mexican cheese
-
2ripe avalados diced
-
2 tspcumin
-
1 tspchili powder
-
11/2 tspadobo powder
-
1 tspsalt
-
1 tsppepper
-
lime juice for squeezing on the avocado
How To Make mexican quinoa one pot dinner

1Put the olive oil and garlic in a large frying pan and sauce for one minute

2Add tomatoes, chilies, corn, black beans, black olives, vegetable broth and dry quinoa.

3Add chili powder, cumin, adobo, salt and pepper. Stir all ingredients together.

4Cover and bring to a boil, then lower heat to simmer for 20 minutes.

5While frying pan is cooking, chop onions and avocado. Drizzle lime juice on the avocado.

6When 20 minutes is up, uncover and stir again. Spoon up and cover with cheese so it can melt. Then garnish with onions and avocado. Serve and enjoy!
