Ingredients For mexican beef and rice skillet

1 lbground beef

1/2onion
-
1/4 ctaco seasoning mix

14 ozdiced tomatoes,undrained

1 cfire roasted corn kernals drained

3/4 cwhite long grain rice,uncooked

2 cbeef broth
-
1 1/2 cmexican blend shredded cheese
How To Make mexican beef and rice skillet

1Cook onion in large skillet over med. heat for 1 -2 minutes, then add ground beef, brown meat and then drain.

2Return to skillet to heat, add taco seasoning, diced tomatoes,corn,rice and beef broth, stir until combined.

3Bring to a small boil, then reduce heat to a simmer and cover. Cook for 20 minutes stirring at 10 minutes. Stir and top with cheese.

4Cover and cook on low for another 3 minutes until cheese is melted. Can top with your favorite toppings, or put mixture in taco shells.
