This was one of my mother's 'speciality' dishes. I must admit, as a child I didn't much care for it, because I didn't like sauerkraut. While mom was not about to cook my dish separately without the sauerkraut (as I tried to talk her into doing) I was allowed to scrape the sauerkraut off my portion. Now, I love this dish, sauerkraut included!

Ingredients For mama's old world casserole

  • 4 slice
    bacon, roughly chopped
  • 2 Tbsp
    flour
  • 1/2 c
    water
  • 2
    cans sauerkraut, 15 oz. each
  • 2
    potatoes, peeled and cubed
  • 3 sm
    apples, cored and roughly chopped (peel if desired)
  • 3 Tbsp
    brown sugar
  • 1 and 1/2 tsp
    caraway seed
  • 3 lb
    polish sausage, cut into 3-inch pieces

How To Make mama's old world casserole

    Fry bacon in large skillet. Stir flour into drippings in pan, brown slightly. Slowly stir in water over medium heat.

    Add all remaining ingredients, mixing well. Cover, and simmer over medium-low heat for about an hour, or until potatoes are tender and all flavors are blended. Enjoy!
