Awesome and easy! Made this one up about 2 years ago, found out I had diabetes and slightly high cholesterol so I decided to experiment! This can also be served as a side dish, really goes well with fish!

Ingredients For mama's black beans

1 Tbspolive oil, light

1 mdonion, finely chopped

1 tspitalian seasoning
-
1 Tbspparsley flakes
-
1 tspfreshly ground black pepper

1 tsppaprika
-
1 tspjalapeno sauce or red hot sauce

4 Tbspcapers
-
1 Tbspadobo seasoning (find in hispanic aisle)

1 canblack beans
-
1 cantomatoes, canned italian-style and diced

1 cansalsa verde
-
water, as needed

4 ccooked brown rice
How To Make mama's black beans

1saute onion w/olive oil in large saucepan on med. heat while adding all spices 'til transparent (everything except canned items)

2add beans, tomatoes,and salsa

3fill bean can about halfway with water and stir to get all the good stuff out, add to pot

4heat through stirring occaisionally

5serve over cooked brown rice
