If you like Red Beans & Rice, you will love this recipe! It's not your ordinary Hoppin John recipe! This one is loaded with bacon, ham and so many seasonings that brings it all together!

Ingredients For loaded cilantro hoppin john

  • 1 Tbsp
    olive oil
  • 1 c
    smithfield thick cut bacon(chopped)
  • 1 c
    diced ham
  • 3
    celery stalk diced
  • 1
    green bell pepper diced
  • 1 md
    white onions diced
  • 2
    jalapeno peppers diced
  • 1 tsp
    fresh thyme
  • 1 Tbsp
    fresh cilantro diced
  • 1 can
    14.5 oz fire roasted diced tomatos with garlic
  • 1 bag
    28oz frozen blackeye peas
  • 1 box
    48oz chicken broth
  • 1 can
    chicken broth (small)
  • 11/2 c
    water
  • 2 box
    cilantro lime rice by zatarain's
  • salt and pepper to taste

How To Make loaded cilantro hoppin john

    In a large pot add the Olive oil over medium low heat.

    Add the bacon, ham. Cook until bacon is brown.

    Add the celery, bell pepper, onion, jalapeno. Cook about five minutes.

    Add salt and pepper, cilantro and thyme.

    Add the tomatoes, and box of chicken broth. Bring to a boil.

    Add the peas. Simmer about an hour.

    In medium pot under medium heat add the can chicken broth and water.

    Add the two boxes of rice. Bring to a boil. Cover, on low heat and simmer 25 minutes.

    Serve beans over the rice!
