We absolutely love having lamb kebobs on the grill....very lean and easy to prepare along with vegetables grilled on a skewer and wild rice......don't forget a glass of wine to toast!!!

Ingredients For lamb kebobs

1/4 colive oil, extra virgin

1/4 clemon juice
-
1 smgarlic clove, minced

1scallion, chopped
-
1/4 tspcoriander, ground

salt and pepper to taste

1/2 lbleg of lamb boneless cut into 1 inch squares
How To Make lamb kebobs

1Combine the olive oil, lemon juice, garlic, scallion, and coriander in a mixing bowl and season to taste with 1/2 teaspoon of salt or more; season with pepper if you wish.

2Add the lamb and marinate for as long as possible (up to 3 hours at room temperature or 6 hours in the refrigerator); turn the meat in the marinade every now and then.

3Soak bamboo skewers in water while this marinates.

4Position the broiler pan 4 to 5 inches away from the heat source and preheat the broiler.

5Thread lamb cubes on skewers.

6Broil kebobs for 6 to 7 minutes a side or until lamb is cooked through.
