My son is interested in medieval and ancient Mediterranean dishes and he likes to experiment with different dishes. This is a Barley Pottage he came up with. It's different, but really good! He makes these often. You can use whatever type of broth in this recipe you like and this recipe can be used as a side dish or a main dish and to make it a little heartier, you can add 2 cups of diced meat of your choice if you'd like. Also, you can do this same recipe with lentils and it's also delicious!

Ingredients For joshua's barley pottage

  • 2 Tbsp
    extra virgin olive oil
  • 1 sm
    onion, very finely chopped
  • 2-3 tsp
    minced garlic
  • 1 tsp
    turmeric
  • 1 tsp
    cumin
  • 1/2 tsp
    ground coriander seed
  • salt & pepper to taste
  • 1 c
    barley (not instant)
  • 6 c
    broth (whatever you like, beef, chicken, turkey, pork, vegetable)
  • 2
    green onions, thinly sliced
  • 1/4 c
    fresh, chopped parsley
  • 4 oz. fresh mushrooms sauteed or 1 can of cooked mushrooms (the fresh ones are better)

How To Make joshua's barley pottage

  • 1
    Heat the 2 Tbsp. olive oil over medium-high heat. Add onions and saute until softened. Add garlic and spices (except salt) in the last 30 seconds to 1 minute of cooking.

    Add Barley and broth to the pot. Bring just to a boil. Turn down heat and simmer uncovered for 45 minutes or until the liquid is nearly cooked off.

    Remove from heat. add salt to taste if needed. (you may not need added salt if your broth is already salted)

    Add green onions, fresh parsley, and sauteed mushrooms and give a quick stir.

    Spoon into a bowl and serve!
