One of those evenings when I was tired from work and had a couple of things to put together, and it turned out to be one of our favorite recipes of all times. Easy, delicious and filling.

Ingredients For italian sausage and squash

2 Tbspolive oil
-
1 pkgmild italian sausage links

2 lgzucchini, spiralized (or sliced)

2 lgyellow squash, spiralized (or sliced)

1/4 cbutter
-
1 clovegarlic, minced (1 t. jarred/1/4 t. garlic powder)

1/2 tspsalt
-
1/2 tspblack pepper
-
1/4 cgrated parmesan cheese
How To Make italian sausage and squash

1In a skillet, heat olive oil on medium high heat, add sausage links and cook until almost done, turning down heat to prevent getting too brown and stirring occasionally. When done, slice into 1/2-inch slices, remove from pan and cover to keep warm.

2In the same skillet, add butter and garlic (either clove, jarred or powder) and salt and pepper. Cook on medium heat about 1-2 minutes, stirring constantly. Add squash, stirring, and cook 3-4 additional minutes. It will take a little longer if squash is sliced.

3Add cooked sausage slices and stir gently. Remove from heat and sprinkle with parmesan cheese.
