Ingredients For indian cauliflower steak w red pepper relish

  • 4 oz
    roasted red peppers drained and cut into thin strips
  • 1/4 c
    cilantro chopped
  • 1
    lemon zested and juiced
  • 1/4 c
    red onion diced
  • 1 lg
    head cauliflower
  • 2
    naan flatbreads
  • 1 Tbsp
    curry powder
  • 2 Tbsp
    butter
  • 1/4 c
    golden raisins
  • 1/4 c
    sour cream
  • 1/2 c
    tomato sauce
  • olive oil

How To Make indian cauliflower steak w red pepper relish

    Preheat oven 400 degrees. Place the naan bread on a baking sheet and brush wth olive oil. Toast in oven for about 8 minutes until brown and crisp. Remove from oven and set aside to cool. Reserve pan for cauliflower.

    Trim the green leaves from the cauliflower. Leave the stem intact. Cut a straight line down either end of the stem reserving the two side pieces. Cut the center section in half. Drizzle the steaks with olive oil add 1/2 the curry powder and salt and pepper.

    Add butter to a skillet and let it melt. Add cauliflower steaks toe pan and caramalize on one side for 4 minutes then flip to the other side and do the same. Transfer the steaks to the baking sheet and place in oven and roast for about 8 more minutes.

    Meanwhile rough chop 1/2 cup of the reserved cauliflower florets. Add to a pot with raisins, red onion, lemon zest and half the lemon juice. Add 2 tbsp water and brind to a boil and continue to cook until the water has been absorbed and caulifloower is softened. Remove from heat and add the roasted red peppers and 1/2 the cilantro and season with salt and pepper

    In a medium pan used for searing the cauliflower combine the sour cream, tomato sauce, the remaining curry powder and remaining lemon juicde. Warm gently. For the cilantro oil mix the remaining cilantro with 2 tbsp olive oil

    to plate. Cut the naan into wedges. Divide the naan between 2 plate. Spoon some sauce in front of the naan and place the cauliflower steak in the sauce. Garnish with the relish and drizzle with cilantro oil
