Ingredients For huevos rancheros

  • 1 Tbsp
    olive oil
  • 4 sm
    shallots chopped
  • 28 oz
    can crushed tomatoes
  • 6 oz
    can green chilies or 1/2 cup chopped fresh anaheim chilies
  • 1 Tbsp
    ancho chili powder
  • 2 Tbsp
    sugar
  • 6
    corn tortillas
  • 6 lg
    eggs
  • handful fresh cilantro chopped

How To Make huevos rancheros

  • 1
    For the Sauce Add oil to saute pan. Saute the shallots and fresh Anaheim chilies if using until softened. Pour in the can of crushed tomatoes, green chilies if using chili powder, and sugar. Season with salt to taste. Cook until warmed through. Set aside.

    Add some oil to a skillet and fry the corn tortillas until browned. Set aside and keep warm.

    Fry the eggs in some butter in the same skillet. To assemble add a little sauce to plate. Top with corn tortilla then fried egg. Top with more sauce and then top with cilantro. Enjoy
