Bought some wonderful looking Chourico Hot Italian Sausage the other day, had zucchini and yellow squash and tomatoes, so just threw this together today. I hope you will try it, and let me know if you like it. I took a photo, but the site said I could not upload now, try again it says? So will try again soon.

Ingredients For hot sausage jambalya

1 lbchourico hot italian sausage

1onion

2 clovesgarlic

1 can 28ozcrushed tomatoes

2 cupswhite rice

1 teaspcajun seasoning (i use penzey's)
How To Make hot sausage jambalya

1Cut up the Chourico sausages, the onion, the zucchini and the yellow squash into bite size pieces.

2Saute' them in a large soup pot until the onions are tender and the sausage is nicely browned. Add the crushed tomatoes, chicken broth, garlic, Cajun seasoning and cook for about 20 minutes. Add the rice, bring everything to a boil, then turn down to a simmer for another 20 minutes until rice is done.
