Ingredients For hoppin' john

  • 2 tsp
    olive oil
  • 1 lg
    onion
  • 6 oz
    chopped ham
  • 1 clove
    garlic, minced
  • 2 can
    (14 oz each) vegetable broth
  • 1 tsp
    worcestershire sauce
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    black pepper
  • 1 1/2 c
    long grain rice
  • 2 can
    (15oz each) black eyed peas
  • 1 can
    (14 1/2 oz.) diced tomatoes

How To Make hoppin' john

    Heat the oil in an extra deep 12" skillet over medium heat. Peel and coarsely chop onion, adding to skillet as you chop. Cook for 2 minutes, stirring occasionally. Add the ham and garlic to the skillet and cook, stirring for 1 minute.

    Add the broth and raise the heat to high stir in the Worcestershire sauce, basil, and black pepper. Cover the skillet and bring to a boil. Then add the rice, stir, and reduce the heat to low. Cover the pan and simmer until the rice is tender, about 20 minutes.

    While the rice cooks, drain and rinse the black eyed peas. Set them aside.

    When the rice is tender, uncover the skillet. Add the black eyed peas and the tomatoes. Cook stirring until the tomatoes and peas are thoroughly mixed in the rice. Serve immediately.
