This new stuffed pork loin recipe I've created uses my famous honey margarine. It's good with a side of mac and cheese and green bean casserole.

  • 2 1/2 stick
    margarine
  • 3/4 c
    honey
  • 7
    bacon strips, chopped
  • 2
    granny smith apples, peeled and finely chopped
  • 1 lg
    carrot, chopped
  • 1 md
    purple onion, peeled and diced
  • 3 clove
    garlic, minced
  • 2 Tbsp
    Italian seasoning
  • 3/4 c
    chopped honey roasted peanuts
  • 4 lb
    fresh pork loin
  • 1 Tbsp
    sea salt mixed with black pepper

How To Make stuffed honey margarine pork loin

    Preheat oven to 375 degrees F.

    Whisk margarine and honey together in a medium bowl until combined.

    In a large skillet over medium heat, cook chopped bacon for 2 minutes until crispy. Remove from heat and set aside.

    Melt 2 tablespoons honey margarine in a medium saucepan over medium-low heat. Add chopped apples and carrots and diced purple onion and cook for 5 minutes until softened.

    Add minced garlic and cook for 2 minutes until fragrant. Stir in bacon bits, chopped honey roasted peanuts and Italian seasoning. Remove from heat.

    To prepare the pork loin, place it fat side down onto a cutting board. Slice through the pork lengthwise near the bottom, cutting it to about a 1/3 to 1/4-inch thickness.

    Spread with 3 tablespoons honey margarine and season with sea salt/black pepper. Top all over with stuffing. Roll up the pork loin and tightly secure with kitchen twine.

    Spread all over with remaining honey margarine. Place in a roasting pan on a rack and bake about 1 hour and 25 minutes, basting with the pan juices.

    Let the pork loin rest for 15 minutes before slicing.
