When i was a child i would spend alot of time with my Aunt Ginger. She was a wonderful cook and she made everything homemade. This recipe i have used over many years. I hope you enjoy the Homemade Manicotti has much as i do.

Ingredients For homemade manicotti

12eggs

1 qtwhole milk

flour start with 1/2 cup
- MANICOTTI FILLING

16 oz.container ricotta

8 oz.mozzarella cheese

4 oz.parmesan cheese
-
3eggs
-
1 tspsalt
-
1 tspwhite pepper
-
1 tspnutmeg
-
1/2 cparsley
How To Make homemade manicotti

1Mix the milk,12 eggs, with a fork add the flour a little at a time until blended well. 1/2 cup flour unusally is the right amount there are times i have added a extra tablespoon. The mixture should be thin. Onece completed set aside.

2Use a nonstick pan. Pour with small ladle into hot teflon frying pan that has been sprayed with pam and work out to the shape of the bottom of the pan.Cooks very quickly because the batter is thin. Flip out of pan coaxing gently with rubber spatula around the edges. Transfer to wax paper. Set aside

3Mix together ricotta cheese,mozzarella cheese, parmesan cheese,the 3 eggs, salt, white pepper, nutmeg and parsley.

4Fill the Manicotti crepe with 1 1/2 tablespoons of mixture and roll in a cylinder shape. Place filled crepes in baking dish with a little of your favorite sauce on the bottom,onece you have each manicotti lined up cover the top with sauce and parmesan cheese.

5Bake at 325 degrees for 1 hour. I cover with foil for 45 minutes. Remove foil the last 15 minutes.
