Ingredients For hobo

  • 12 oz
    ground sausage
  • 1 md
    onion chopped
  • 4 oz
    fresh mushrooms chopped
  • 3 clove
    garlic minced
  • 1/4 c
    vegetable oil
  • 3 c
    shredded potatoes or frozen hashbrowns thawed
  • 6 lg
    eggs beaten
  • 2 c
    shredded sharp cheddar cheese
  • salt and pepper to taste

How To Make hobo

  • 1
    Brown the sausage and remove with a slotted spoon to a plate and set aside. Add the onion, mushrooms, and garlic. Saute until browned and onions translucent. Remove to plate with sausage.

    Add the oil to the skillet and get it hot. Add the hashbrowns and season with salt and pepper. Cook until browned on one side. Add the beaten eggs and sausage mixture. Scramble all together cooking until eggs and potatoes are done.

    Scatter the cheese over top. Cover and remove from heat and let sit until cheese is melted. Serve
