Ingredients For hillbilly "philly" cheesesteak sandwiches

1 md6" submarine sandwich rolls

1 Tbspmayonnaise
-
1 Tbspyellow mustard
-
1 tspolive oil, extra virgin (evoo)

1/4 lbdeli bologna, chipped
-
1 sprigyellow onions
-
2 sliceamerican cheese
-
1/2 ccrushed, plain potato chips
How To Make hillbilly "philly" cheesesteak sandwiches

1Slice the sub rolls if needed. Add the mayo to both sides. Add the mustard to the mayo. Set aside

2Add EVOO to a hot skillet, prefer cast iron. Add onion. Saute until onion starts to turn clear. Add the chipped bologna. toss till bologna starts to brown. don't let it get too dark/burnt. remove from heat and add cheese over bologna.

3transfer bologna/onion/cheese to roll. top with crushed chips. serve
