This makes a savory seitan to use instead of meat in a variety of dishes, e.g. a hearty risotto, soups, and stews.

Ingredients For heidi's seitan

  • 1 box
    hodgson's mill vital wheat gluten (6.5 oz.)
  • 1/4 c
    flour
  • 1 1/4 c
    water or stock
  • 1 Tbsp
    porcini mushroom powder
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    penzey's forward!
  • 1 Tbsp
    soy sauce
  • 2 Tbsp
    toasted sesame oil

How To Make heidi's seitan

  • 1
    Preheat oven to 325F.
  • 2
    Mix all ingredients in the KA mixer bowl. Mix with the paddle. Switch to the dough hook and knead 5 minutes.

    Form a log using parchment paper. Twist ends. Cover with foil. Place on oven rack without pan.

    Bake 45 minutes. Flip. Bake an additional 45 minutes.

    Cool, unwrap, use.
