This makes a savory seitan to use instead of meat in a variety of dishes, e.g. a hearty risotto, soups, and stews.

Ingredients For heidi's seitan

1 boxhodgson's mill vital wheat gluten (6.5 oz.)

1/4 cflour

1 1/4 cwater or stock

1 Tbspporcini mushroom powder

1/2 tspgarlic powder

1/2 tsponion powder
-
1/2 tsppenzey's forward!

1 Tbspsoy sauce
-
2 Tbsptoasted sesame oil
How To Make heidi's seitan

1Preheat oven to 325F.

2Mix all ingredients in the KA mixer bowl. Mix with the paddle. Switch to the dough hook and knead 5 minutes.

3Form a log using parchment paper. Twist ends. Cover with foil. Place on oven rack without pan.

4Bake 45 minutes. Flip. Bake an additional 45 minutes.

5Cool, unwrap, use.
