3 Tbspvegetable oil

3 lbbeef chuck roast, cut into 1" pieces

2 mdonions, chopped

2 stalkcelery, chopped

3 Tbspall purpose flour

1 Tbspminced garlic

1 Tbsptomato paste

2 tspchopped fresh thyme

1-1/2 tspsalt

1/2 tspblack pepper

1 bottleguinness stout beer (11 oz.)

1 cbeef broth, reduced sodium

3carrots, peeled and cut into 1" chunks

4 smturnips (3/4 lb.), peeled and cut into 1" pieces

4 mdyukon gold potatoes (1 lb.), peeled and cut into 1" pieces

1/4 cchopped fresh parsley
How To Make guinness beef stew

1Preheat oven to 350ºF. Heat 2 Tablespoons oil in Dutch oven over medium-high heat until almost smoking. Add beef in two batches; cook about 10 minutes per batch or until browned on all sides. Remove beef to a large bowl.

2Add remaining 1 Tablespoon oil to Dutch oven; heat over medium heat. Add onions and celery; cook about 10 minutes or until onions are softened and translucent. Add flour, garlic, tomato paste, thyme, salt and pepper; cook and stir 1 minute. Add Guinness beer; use wooden spoon to scrape up browned bit from bottom of Dutch oven. Return beef to pan; stir in broth.

3Cover and bake 1 hour. Stir in carrots, turnips and potatoes; cover and bake about 1 hour 20 minutes or until beef and vegetables are tender. Stir in parsley.
