My rendition of my Grandpa’s stew he would make with the string beans grown in his garden

Ingredients For grandpa‘s stew

  • 1 1/2 Tbsp
    olive oil
  • 16 oz
    sweet or mild italian sausage links
  • 1 md
    yellow onion rough chopped
  • 2 lg
    cloves of garlic rough chopped
  • 28 oz can
    crushed tomatoes + 1 can of water
  • 28 oz can
    diced tomatoes
  • 10 3/4 oz can
    condensed tomato soup
  • 1 Tbsp
    sugar
  • 2
    bay leaves
  • 2 tsp
    italian seasoning
  • 1 tsp
    dried oregano
  • 1 tsp
    dried parsley
  • 16 oz
    pepperoni stick cut into 1/2“ slices
  • 4-5 md
    russet potatoes peeled and diced into ¾” cubes
  • 1 1/2 lb
    fresh string beans (green beans) cleaned and rinsed
  • parmesan cheese, butter and italian bread for serving

How To Make grandpa‘s stew

    Pour oil in large heavy bottom stock pot over medium heat
  • 2
    Cook sausage in pot, remove cut into 1/2" pieces and set aside
  • 3
    Add onions and cook translucent
  • 4
    Add garlic cook 1 minute more
  • 5
    Add crushed, diced tomatoes, condensed tomato soup, water, bay leaves, sugar and remaining dried seasoning. Mix Well
  • 6
    Stir in Sausage, Pepperoni, potatoes and string beans. Mix well and bring to a simmer

    Lower heat and cover for three hours or longer
  • 8
    Remove and discard Bay leaves
  • 9
    Serve topped with parmesan cheese and buttered italian bread. Enjoy!
