1pound boneless chicken cut into bite-size pieces (thighs work well)

1/2pound andouilee sausage

1cup diced onion

1/2cup celery, fine dice

1/2cup diced green bell pepper

1/2cup diced red bell pepper

2cloves garlic, minced
-
114-½ oz. can diced tomatoes
-
1 1/2cups uncooked rice
-
3cups chicken stock or canned broth

2bay leaves
-
1/2teaspoon cayenne
-
1teaspoon salt
-
1/2teaspoon black pepper
-
1/2teaspoon white pepper
-
1teaspoon dried thyme leaves

1/4cup green onions including tops, chopped fine
How To Make george's - luckenbach saturday night jambalaya

1In a heavy skillet or Dutch oven, saute the chicken and sausage in a small amount of vegetable oil.

2Add the onion, celery, peppers and garlic. Continue sauteing until the vegetables are limp.

3Add the remaining ingredients except the green onion, cover and simmer 45 minutes to an hour or until the rice is tender.

4Stir in the green onions and simmer a few minutes more. Adjust seasonings and enjoy.
