garlic meatloaf and sandwiches

This is a great meatloaf and especially good on sandwiches. It's a variation of the meatloaf my mother made at my parents' deli. I don't usually measure when I make this, so I'm estimating quantities. My parents made this specially for hot meatloaf sandwiches, served at lunch on Kaiser rolls or rye bread. You can add tomatoes, onion - either raw or caramelized, and/or coleslaw and mayo. I added the sauce to make this a main dish meatloaf if desired.

Ingredients For garlic meatloaf and sandwiches

1 lbground beef - 80/20 is best

1/2 lbground pork
-
1 1/2 cseasoned croutons or stuffing mix

1egg
-
1 Tbspworcesters sauce

4-5 clovegarlic, crushed fine

1/2 ctomato sauce
-
1/2 cfinely diced onion
-
salt and pepper to taste for both the meatloaf and sauce

1 Tbspsugar

1 tspitalian seasoning

1 candiced tomatoes - use amount needed, you may not want the whole can, or you can drain some of the liquid out.
How To Make garlic meatloaf and sandwiches

1Combine first 9 ingredients (through salt & pepper). Shape into loaf in oven proof pan, mixing as little as possible so as to not over handle meat.

2Cook at 350 degrees for about 40 minutes. Mix sauce ingredients (last 6 ingredients) and pour over loaf in pan.

3Cook until done, about 30 minutes more.
