I make this quick rice dish and serve it with a Yogurt dip when i do not have time to cook

Ingredients For garbanzo pulao (pilaf)

  • 2 c
    basmati rice
  • 1 can
    garbanzos juice drained and rinsed under cold running water
  • 1/2
    onion sliced
  • 1 tsp
    cumin seeds
  • 2
    serrano chiles , feel free to reduce or increase according to taste
  • 2 Tbsp
    canola oil
  • 1
    bay leaf
  • 1 stick
    cinnamon
  • 3
    cloves
  • 1 tsp
    ginger paste/ crushed
  • 1 tsp
    garlic paste/ crushed
  • 1 1/2 tsp
    salt or to taste
  • 3 1/2 c
    water

How To Make garbanzo pulao (pilaf)

    Wash and drain rice
  • 2
    Heat oil in a pot
  • 3
    Once oil is heated (not smoking)add the Cumin seeds,cinnamon, cloves and bay leaves.Saute till it sizzles a lil bit.

    Add sliced onion and fry till light brown
  • 5
    Now add the ginger and garlic pastes with the serrano peppers

    Once ontion is brown add the Garbanzo beans, fry for about 30 seconds

    Add the drained rice and salt to the mix. Saute for about 1 minute

    Add 31/2 cups of water and bring to boil
  • 9
    Once it comes to a boil reduce to low flame and cover till the rice is done. It will look nice and soft .

    Serve by itself or with any chicken dish. I usually like to serve with a yougrt/ Cusomber Dip that we call Raita
