I grew up on fried potato patties and salmon patties and I fix those all the time. One day I decided to combine the two and this recipe is the end result. Absolutely delicious, the whole family loved them.

Ingredients For fried potato salmon patties

  • 1 c
    leftover, seasoned mashed potatoes
  • 5 oz
    can skinless, boneless salmon, drained
  • 1 lg
    egg
  • 2
    green onions, chopped
  • 1/4 c. + 1 t. all purpose flour
  • 1/4 tsp
    smoked paprika
  • 1/4 tsp
    garlic powder
  • 1/4 c
    shredded colby jack cheese
  • veg. oil for frying

How To Make fried potato salmon patties

  • 1
    Combine all the ingredients in a bowl. Heat about 1/4" of oil in a skillet. Drop the mixture by spoonfuls and slightly flatten out. Cook till golden brown on both sides, about 2-3 minutes per side. Drain on a paper sack or paper towel lined plate. Approx. 14-16 patties.
