My daughter cut this recipe from a magazine years ago and it has become a favorite. The lady who posted it said she didn't know who "Fred" was or why it was named "Fred", but "Fred was just Fred in their house." So it has continued in ours. I do know that it's one dish that is a comfort food.

Ingredients For fred

14 ozpackage butterball turkey smoked sausage (you can use regular smoked sausage if you prefer)

2 - 3 mdred potatoes, peeled and cut into chucks

1 mdonion, coarsely chopped

1 mdapple, (optional) peel, deseed and chop into chunks

1/2 mdhead of cabbage, coarsely chopped

small amount of evoo (extra virgin olive oil)

1/2 stickbutter

pinch or two of red pepper flakes, optional and according to your taste

salt and black pepper to your taste
How To Make fred

1In a large skillet, melt butter, add EVOO and heat over medium heat.

2Slice smoked sausage into about 3/4" slices and add to heated butter/EVOO. While browning meat to desired brownness, cut up vegetables. Add to skillet and cover. Turn down heat so as not to burn. Cook until tender.
