We had an exchange student from Brazil who loved to cook and introduced us to this version of Brazil's national dish! This version uses less fatty cuts of meat than traditional. You can sub another kind of sausage if desired. Serve with braised spinach, collard greens or kale. While collard greens are the most authentically Brazilian, they are not always easy to find!

Ingredients For feijoada a la carolina

  • 1 Tbsp
    olive oil
  • 1
    onion, minced
  • 2-3 clove
    garlic, thinly sliced
  • 1 1/2 c
    dry white rice
  • 3 c
    water
  • 1
    bay leaf
  • 1 tsp
    beef bouillon
  • 2 can
    black beans, drained and rinsed (15 oz each)
  • 1/2 lb
    ham, diced
  • 1/2 lb
    turkey sausage, sliced
  • 2 Tbsp
    bacon crumbles
  • 1 tsp
    minced parsley
  • 1/4 tsp
    smoked paprika
  • 1/2 - 1 tsp
    salt, or to taste
  • 1/2 tsp
    freshly ground black pepper, or to taste
  • hot sauce, to serve

How To Make feijoada a la carolina

  • 1
    Heat oil in a large pot. Add minced onion, garlic and rice. Stir and cook for about 5 minutes.

    Add water, bay leaf and beef bouillon. Bring to boil, then turn down heat. Cover and simmer until rice is done.

    Add remaining ingredients. Simmer together for another 5 minutes or so.
