    whole wheat english muffins,toasted
  • 8
    thin red and/or yellow tomato slices
  • 4 oz
    fresh mozerella ,cut into 4 slices
  • 4 tsp
    snipped fresh basil
  • 4 tsp
    olive oil
  • 1/4 tsp
    salt
  • 1/4 tsp
    cracked black pepper
  • 4
    grape tomatoes or cherry tomatoes, halved,optional

How To Make diabetic..cheese and tomato stack

    For each serving,on one English muffin halve,layer a tomato slice,a mozzarella slice,and 1/2 teaspoon of the basil.Repeat layers

    In a small bowl,combine olive oil,salt, and pepper. Drizzle over top. If desired,top with the grape tomato halves.
