My family loves chili year round so I make many variations of the dish. This version turned out to be everyones favorite and it also won third place in a chili cook off.

Ingredients For dad's chili

  • 1 lb
    ground beef
  • 1 lb
    ground italian sausage
  • 1 tsp
    salt and pepper
  • 1 tsp
    cayenne pepper
  • 1 c
    diced onion
  • 1 clove
    diced garlic
  • 1 c
    diced red bell pepper
  • 1 c
    diced green bell pepper
  • 2 can
    tomato sauce
  • 1 can
    crushed tomatoes
  • 1 can
    fired roasted diced tomato with garlic
  • 1 pkg
    chili seasoning
  • 1 can
    diced japelenos
  • 1 tsp
    tabasco sauce
  • 1 can
    seasoned kidney beans
  • 1 can
    diced green chiles

How To Make dad's chili

  • 1
    Mix salt, pepper, and cayenne in small bowl.

    Rub on both sides of ground meats, set aside for 15 minutes.

    In a large pot over medium heat, brown the meat; drain.
  • 4
    Add remaining ingredients, except the beans, and simmer for 1 hour.
  • 5
    Add the beans and continue to cook for 20 minutes.

    Note: For a less spicy chili, reduce the amount of cayenne pepper.
