Friday night is curry night! This is an easy recipe that can be adapted to suit your own personal taste.

Ingredients For curry sauce

  • 1
    onion
  • 2 clove
    garlic
  • 1
    chili pepper
  • oil
  • 1 Tbsp
    flour
  • 1 Tbsp
    curry powder
  • 500 ml
    stock
  • salt
  • pepper
  • yogurt, plain
  • cilantro, fresh

How To Make curry sauce

  • 1
    Finely chop (or liquidize in a processor) the onion, garlic and chili pepper with a little water. Fry in a little oil until soft.

    Add the flour and curry powder and stir until well mixed. Slowly add the stock, stirring all the time. Season with salt and pepper.

    Simmer for 10 minutes, then add the meat, fish or vegetable of your choice. Simmer until cooked through.

    Add a dollop of plain yoghurt, taste and adjust the seasoning. Sprinkle with some finely chopped coriander (cilantro) leaves. Serve with Basmati rice, pappadoms and chutneys of your choice.
