Ingredients For curry sauce

1onion

2 clovegarlic

1chili pepper
-
oil

1 Tbspflour

1 Tbspcurry powder

500 mlstock

salt
-
pepper

yogurt, plain

cilantro, fresh
How To Make curry sauce

1Finely chop (or liquidize in a processor) the onion, garlic and chili pepper with a little water. Fry in a little oil until soft.

2Add the flour and curry powder and stir until well mixed. Slowly add the stock, stirring all the time. Season with salt and pepper.

3Simmer for 10 minutes, then add the meat, fish or vegetable of your choice. Simmer until cooked through.

4Add a dollop of plain yoghurt, taste and adjust the seasoning. Sprinkle with some finely chopped coriander (cilantro) leaves. Serve with Basmati rice, pappadoms and chutneys of your choice.
