Ingredients For creamy ravioli with spinach and tomatoes

1 pkgfresh ravioli of your choice, i used truffle ravioli from trader joe's.

2 cfresh spinach

1 cheavy cream
-
1/2 cgrated parmesan cheese

2 clovegarlic, minced

2 Tbspbutter

1/8 csundried tomatoes, chopped

1 ccherry tomatoes, sliced in half

1/2 tspblack garlic minced

salt and pepper to taste

red pepper flakes, optional
-
pinchfreshly grated nutmeg
How To Make creamy ravioli with spinach and tomatoes

1Cook the ravioli according to the package instructions until al dente. Drain and set aside.

2In a large skillet, melt butter over medium heat. Add the minced and black garlic and saute for about 1-2 minutes until fragrant.

3Stir in the fresh spinach, and sun dried tomatoes and cook until the spinach wilts, which should take 2-3 minutes.

4Pour in the heavy cream and bring it to a gently simmer. Let it simmer for 3-4 minutes, allowing the cream to thicken slightly.

5Stir in the Parmesan cheese and continue to cook, stirring constantly, until the cheese has melted and the sauce is creamy.

6Season the sauce with, salt pepper, nutmeg, and red pepper flakes if you want a bit of heat.

7Add the halved cherry tomatoes to the skillet.

8Gently stir the cherry tomatoes into the sauce and allow them to simmer for about 2-3 minutes until they start to soften and release their juices.

9Add the cooked ravioli to the skillet and toss everything together until the ravioli is coated in the creamy sauce.
