Ingredients For creamy ravioli with spinach and tomatoes

  • 1 pkg
    fresh ravioli of your choice, i used truffle ravioli from trader joe's.
  • 2 c
    fresh spinach
  • 1 c
    heavy cream
  • 1/2 c
    grated parmesan cheese
  • 2 clove
    garlic, minced
  • 2 Tbsp
    butter
  • 1/8 c
    sundried tomatoes, chopped
  • 1 c
    cherry tomatoes, sliced in half
  • 1/2 tsp
    black garlic minced
  • salt and pepper to taste
  • red pepper flakes, optional
  • pinch
    freshly grated nutmeg

How To Make creamy ravioli with spinach and tomatoes

    Cook the ravioli according to the package instructions until al dente. Drain and set aside.

    In a large skillet, melt butter over medium heat. Add the minced and black garlic and saute for about 1-2 minutes until fragrant.

    Stir in the fresh spinach, and sun dried tomatoes and cook until the spinach wilts, which should take 2-3 minutes.

    Pour in the heavy cream and bring it to a gently simmer. Let it simmer for 3-4 minutes, allowing the cream to thicken slightly.

    Stir in the Parmesan cheese and continue to cook, stirring constantly, until the cheese has melted and the sauce is creamy.

    Season the sauce with, salt pepper, nutmeg, and red pepper flakes if you want a bit of heat.

    Add the halved cherry tomatoes to the skillet.

    Gently stir the cherry tomatoes into the sauce and allow them to simmer for about 2-3 minutes until they start to soften and release their juices.
