I married a Ukrainian and he loves kielbasa and kraut. So about 30 years ago, I wanted to make something for him that wouldn't take too long. I came up with this recipe and it's so delicious! I use the fatback but you can dice up 2 strips of bacon and cook to get the same effect. It's a definite favorite. I make it with and without the vodka.

The sauerkraut and vodka are tangy, while the onions caramelize for sweetness. Sour cream is a surprise that brightens up the flavors and brings the dish together. We opted to use bacon instead of fatback, and that added some smoky flavor. Try serving this with dill potatoes for a wonderful meal.

Ingredients For creamy kielbasa kraut surprise

  • 1 slice
    fatback or 2 slices of bacon
  • 1 pkg
    refrigerated sauerkraut, drained
  • 1 sm
    carrot, shredded
  • 1 sm
    onion, diced
  • 1 bunch
    smoked kielbasa, sliced into circles or diced
  • 1 lg
    onion, sliced
  • 1/2
    shot of vodka
  • 4 oz
    sour cream

How To Make creamy kielbasa kraut surprise

  • Fry 1 slice of fatback or 2 slices of bacon.

    In a large frying pan, on medium-high heat, add your fatback (or bacon) and cook. Once crisp, chop and keep it in the pan.
  • Add sauerkraut. shredded carrot, and diced onion.

  • Add sliced kielbasa.

    Add the kielbasa and stir until cooked.
  • Add sliced onion and vodka.

  • Add the sour cream. Stir to incorporate and heat until creamy.
