creamy kielbasa kraut surprise
I married a Ukrainian and he loves kielbasa and kraut. So about 30 years ago, I wanted to make something for him that wouldn't take too long. I came up with this recipe and it's so delicious! I use the fatback but you can dice up 2 strips of bacon and cook to get the same effect. It's a definite favorite. I make it with and without the vodka.

1 slicefatback or 2 slices of bacon

1 pkgrefrigerated sauerkraut, drained

1 smcarrot, shredded

1 smonion, diced

1 bunchsmoked kielbasa, sliced into circles or diced

1 lgonion, sliced

1/2shot of vodka

4 ozsour cream
How To Make creamy kielbasa kraut surprise

1In a large frying pan, on medium-high heat, add your fatback (or bacon) and cook. Once crisp, chop and keep it in the pan.

2Then add sauerkraut, shredded carrot, and diced onion. Cook until translucent and soft.

3Add the kielbasa and stir until cooked.

4Add the sliced onion and the vodka.

5Cook until the onions are translucent. Once all is incorporated and cooked, lower the gas to med/low.

6Add the sour cream. Cook until the sour cream is soft and creamy throughout the pan. Mix well. Lower to simmer to get the favors all combined. Then serve.
