I love this egg salad because it has cream cheese in it. I like it on rye or Pumpernickel bread with lettuce.Sometimes I add a tomato. I have made this with less pickle relish and sweet peppers. I liked it with less.

Ingredients For creamy egg salad

  • 1 pkg
    (3oz) cream cheese
  • 1/4 c
    mayonnaise or salad dressing
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/4 c
    finely chopped green or red sweet pepper
  • 1/4 c
    finely chopped celery
  • 1/4 c
    sweet pickle relish
  • 2 Tbsp
    minced fresh parsley
  • 8 lg
    hard cooked eggs

How To Make creamy egg salad

  • 1
    Beat the first 4 ingredients until smooth. Add next 4 ingredients. Fold in eggs. Refrigerate until serving.
