Ingredients For cowpoke pintos

1 lbdried pinto beans, soaked overnight

8 cwater
-
12 ozcoca cola
-
1 14-oz canwhole tomatoes

1 1/2 mdonions, chopped

1/4 cbarbecue sauce (tomato-based)

2 sliceslab bacon, chopped
-
3 Tbspchili powder
-
2 Tbspworcestershire sauce

4 clovegarlic, minced
-
3serrano chiles, minced (or 2-3 jalapenos)

2 tspcumin seeds, toasted and ground

1 tspsalt, or to taste
How To Make cowpoke pintos

1In a Dutch oven or heavy stockpot, combine all the ingredients except the salt.

2Bring to a boil over high heat, then reduce to a simmer.

3Cook slowly, stirring up from the bottom occasionally, for at least 2 hours, adding more water if the beans begin to seem dry.

4Stir in the salt in the last few minutes of cooking.

5The beans should hold their shape but be soft and just a little soupy. Serve them in bowls with a bit of the cooking liquid.
