Cowboy sandwiches have always been a family favorite! My great-grandmother Charlotte Kennedy made these for her children, grandchildren and great-grandchildren. And all of us have made them for our children and grandchildren.... This is a very simple, fast, delicious, and fun meal to prepare. We love watching sports on T.V. and munching on these goodies! This was my father's absolute favorite sandwich! Cowboy sandwich? As the story goes.... the toast shape is the outer part of a branding iron, the round tomato slice represents the word CIRCLE, the bacon represents the letter X, and the cheese represents the cattle ranch.... Circle X Ranch! *** If there weren't tomatoes available, they were made without... still a good sandwich! Anyway Pardners...You All Try This Here Food... Ya Hear?

Ingredients For cowboy sandwiches

  • 10 slice
    white bread
  • 10 lg
    slices of tomatoes (about 1/4 - inch thick)
  • 20 slice
    bacon (cooked and crisp)
  • 10 slice
    american cheese

How To Make cowboy sandwiches

    Toast the bread slices. Place them on a baking sheet.

    Place one large tomato slice on each slice of toast. (If you don't have a large slice of tomato use 1 - 2 slices).

    Put two slices of bacon in the shape of an X on top of the tomato.

    Top each one with a slice of cheese.

    Place in oven under the broiler. Keep close watch so they don't burn! They are done when the cheese is melted, bubbles form with browned spots.

    ***These open face sandwiches are good with nothing on them, but we do like a sprinkle of salt and pepper on top.
