Beans are often a cheaper buy than other base ingredients. When I was raising my kids I was constantly looking for fast, simple, CHEAP foods to feed them. These cowboy beans were the result of an “oh no I forgot to thaw the meat before I left for work!” Night. Amazingly, the kids LOVED them. We serve a bowl of hot beans with shredded cheese, sour cream and tortilla chips now. You can also throw in a can of corn, garbanzos, chili beans, canneli beans... I like the different colors in the dish, that’s why I picked the ones you see here. For vegetarian or vegan dishes, simply don’t add meat
