This is a casserole my mom made for us growing up. Everytime I make it, it reminds me of her. Simple, quick and easy, too.

Ingredients For corned beef casserole

3 cegg noodles, uncooked
-
1 cancream of chicken or celery soup
-
27 ozcanned corned beef
-
1 cmilk
-
1 1/2 cshredded cheese, sharp cheddar, separated

1/4 cdiced onion, optional
-
1/4 cdiced green pepper, optional

1/2 cbread crumbs, buttered
How To Make corned beef casserole

1Cook noodles just until tender. Drain.

2Mix together soup and milk until blended. Add in crumbled corned beef, 1 cup cheese, onion and green pepper.

3Mix with noodles and place in buttered 2 qt. casserole. Mix buttered bread crumbs with remaining 1/2 cup shredded cheese and sprinkle on top.

4Bake for 30 minutes at 350 until hot and bubbly.

5Optional: I've mixed corn, peas or mixed veggies into this, as well, to up the veg content.
