Hubby and I went to a "mom and pop" restaurant in our small town this morning and this was on the menu. The whimsical name caught my attention, but the ingredients really made me curious so I ordered one.........OMGoodness. These will make a rabbit hug a dawg!!! I came home and looked online for a cornmeal waffle recipe which I found at Southern Living. The restaurant didn't add the sour cream, but I think it would be good. I know it sounds like a heart attack on a plate so you wouldn't want to eat this very often, but if you try it, I think you will like it! ***The waffle recipe said that these ingredients make twelve 4 inch waffles, but I have not tried it yet, so I don't know for sure.

Ingredients For copycat texas "cow patties"
- WAFFLE:

1 1/2 ccorn meal

1/2 cflour

2 1/2 tspbaking powder

2 Tbspsugar

3/4 tspsalt

1large egg, beaten

1/1/2 cmilk
-
1/4 cbutter, melted
- TOPPINGS:
-
1onion, chopped
-
...shredded cheddar cheese
-
...jalapeno slices
-
...sour cream
-
2large cans chili (not hot dog sauce) with or without beans as per preference
How To Make copycat texas "cow patties"

1WAFFLE: Stir together first 5 ingredients in a large bowl. Stir together egg, milk and butter; add to cornmeal mixture, stirring just until dry ingredients are moistened. Bake in a preheated, oiled waffle iron just until crisp.

2Place waffle on a plate and spread chili to cover top of waffle. Top chili with any combination of the following to taste: cheese, onion, jalapeno slices, and sour cream.
