Ingredients For chunky vegetable stew with chickpeas

2 Tbspoil

1 canchick peas, canned and drained

salt and pepper to taste

1 tspmarjoram

1/2 cchopped parsley

5 cwater

3 ctomato juice

1 lgpotato, cubed
-
2parsnips, scrubbed and sliced

2carrots, cut in pieces
-
2celery stalks cut in chunks

1 cchopped onions
-
2garlic cloves
-
2 ccabbage head, shredded
How To Make chunky vegetable stew with chickpeas

1Heat the oil in a large pan and toss the onion, garlic, celery, carrots, parsnips and potato in it over a low heat.

2Add the juice and water, marjoram, oregano, salt and pepper to taste.

3Increase the heat and simmer for 20 minutes.

4Add the drained chickpeas and the cabbage, if you are using it, and cook for a further 10 minutes.
