Sausages are favorites in many parts of the world. Argentinian chorizo are a little different from others known as chorizo as these include red wine. You may have to substitute Italian sausage or another good quality pork sausage. This would be great on a cold winter's night, but will still be delicious in the summer. No reason why it couldn't be cooked in a slow cooker.

Ingredients For chorizo hot pot

  • 4
    argentinian chorizo (italian sausage can be subbed)
  • 1 lg
    onion, sliced
  • 1 clove
    garlic, chopped
  • 1
    red or green pepper, seeded and sliced
  • 1/2 Tbsp
    tomato paste
  • 1/2 c
    white wine
  • 2 lg
    tomatoes, chopped
  • 1
    bay leaf
  • 1/2 Tbsp
    oregano, dried
  • 1/2 Tbsp
    paprika
  • salt and pepper, to taste

How To Make chorizo hot pot

    Heat olive oil in a pan and fry the sausages. Turn as they are cooking so they start to brown somewhat on each side.

    Add onions, garlic and peppers. Lower heat and cook for 5 minutes, or until they start to soften.

    Add tomato paste. Stir and cook for a couple minutes, then add wine and simmer for another minute.

    Add chopped tomatoes, and the rest of the ingredients. Cover and cook for about 20 to 25 minutes.

    Serve with mashed potatoes or crusty bread.
