We were pleasantly surprised by this flavorful chicken tikka masala. It's not traditional, but quite tasty. The seasonings on the chicken breasts are not overly spicy. The sauce is savory and creamy thanks to the coconut cream. Serve over steamed rice and with Naan bread for a quick weeknight meal.

Ingredients For chicken tikka masala
- DRY INGREDIENTS

2 tspdried minced onion
-
1 tspdried minced garlic
-
2 tsppaprika
-
1 tspGaram Masala
-
1/2 tspground cumin
-
1/2 tspred pepper flakes, optional
- OTHER STUFF
-
3 Tbspbutter
-
2 lbboneless skinless chicken breasts cut into cubes

2 tsplemon juice
-
1 candiced or crushed tomatoes (14 oz)

1 cancoconut cream
-
2 tspcorn starch
-
salt and pepper, to taste
How To Make chicken tikka masala

1Melt butter in a large pan over medium heat. If you are using fresh onion and garlic add them now and slightly saute.

2Add the chicken and lemon juice. Cook and stir for about 10 minutes or until the chicken is almost done.

3Add the spices and tomatoes. Cover and simmer for 10 to 20 min. Salt and pepper to taste.

4Stir the coconut cream and corn starch together.

5Add to the chicken.

6Stir well and bring to a boil.

7Serve over rice. Delicious!
