This is delicious pizza and my family loves it! I usually divide the dough in half to make two 12" crust pizzas. This recipe has been developed for a 14" round deep-dish pizza pan. The pizza could also be baked in a 13x9x2" cake pan. Roll the dough into a 15x11" rectangle. Baking time may be slightly less. I personally like to divide the dough in half, pat out 2 12" round pizzas, and add 1 or 2 other kinds of cheese. Experiment and have fun.

Ingredients For chicago-style deep-dish pizza

  • PIZZA SAUCE
  • 1 can
    tomato sauce (8 oz.)
  • 1 can
    tomato paste (6 oz.)
  • 1 - 1 1/2 tsp
    dried oregano
  • 1 tsp
    parsley flakes
  • 1/2 - 3/4 tsp
    dried basil
  • 1/2 tsp
    salt
  • 1/8 tsp
    garlic powder
  • 1/8 tsp
    crushed red pepper
  • PIZZA CRUST
  • 1 pkg
    quick-rise yeast
  • 1/4 tsp
    sugar
  • 1/2 c
    warm water (110*-115* F)
  • 3 1/2 c
    all-purpose flour
  • 1 1/2 tsp
    salt
  • 3/4 c
    water
  • 3 Tbsp
    oil
  • TOPPINGS:
  • 1 lb
    pork sausage, lightly browned
  • 1 c
    sliced mushrooms
  • 1/3 c
    diced green peppers
  • 1/4 c
    chopped onion
  • 1 pkg
    mozzarella cheese (8 oz.)

How To Make chicago-style deep-dish pizza

    Combine tomato sauce and paste with seasonings; simmer 10 to 15 minutes. In a large skillet, lightly brown sausage; drain.

    Prepare other ingredients and set aside.

    Dissolve yeast and 1/4 teaspoon sugar in warm water. Set aside for 5 minutes.

    In a food processor container with a dough blade add flour and salt.
  • 5
    Pour the yeast mixture into the flour mixture.

    Heat water and oil to 110 -115 F. Pour it into the flour mixture.

    Once a dough ball forms, process for 60 seconds until the dough cleans the sides of the container.

    Place dough in an oiled bowl. Cover with plastic wrap and a towel. Let rest for 15 minutes. Preheat the oven to 425 degrees F.

    On a lightly floured surface, roll the dough to a 16" circle or a 15x11" rectangle.

    Place dough in a greased deep dish at least 2 inches deep.

    Spread the sauce over the top of the dough. Then sprinkle the cooked pork over the sauce.

    Arrange mushrooms, green pepper, and onion over the sausage.

    Sprinkle cheese on top.

    Bake at 425 degrees F for 20 - 25 minutes until the edges are crisp and golden brown and the cheese is melted.
