This is delicious pizza and my family loves it! I usually divide the dough in half to make two 12" crust pizzas. This recipe has been developed for a 14" round deep-dish pizza pan. The pizza could also be baked in a 13x9x2" cake pan. Roll the dough into a 15x11" rectangle. Baking time may be slightly less. I personally like to divide the dough in half, pat out 2 12" round pizzas, and add 1 or 2 other kinds of cheese. Experiment and have fun.

Ingredients For chicago-style deep-dish pizza
- PIZZA SAUCE

1 cantomato sauce (8 oz.)

1 cantomato paste (6 oz.)

1 - 1 1/2 tspdried oregano
-
1 tspparsley flakes
-
1/2 - 3/4 tspdried basil

1/2 tspsalt
-
1/8 tspgarlic powder
-
1/8 tspcrushed red pepper
- PIZZA CRUST
-
1 pkgquick-rise yeast
-
1/4 tspsugar
-
1/2 cwarm water (110*-115* F)
-
3 1/2 call-purpose flour
-
1 1/2 tspsalt
-
3/4 cwater
-
3 Tbspoil
- TOPPINGS:

1 lbpork sausage, lightly browned

1 csliced mushrooms
-
1/3 cdiced green peppers
-
1/4 cchopped onion
-
1 pkgmozzarella cheese (8 oz.)
How To Make chicago-style deep-dish pizza

1Combine tomato sauce and paste with seasonings; simmer 10 to 15 minutes. In a large skillet, lightly brown sausage; drain.

2Prepare other ingredients and set aside.

3Dissolve yeast and 1/4 teaspoon sugar in warm water. Set aside for 5 minutes.

4In a food processor container with a dough blade add flour and salt.

5Pour the yeast mixture into the flour mixture.

6Heat water and oil to 110 -115 F. Pour it into the flour mixture.

7Once a dough ball forms, process for 60 seconds until the dough cleans the sides of the container.

8Place dough in an oiled bowl. Cover with plastic wrap and a towel. Let rest for 15 minutes. Preheat the oven to 425 degrees F.

9On a lightly floured surface, roll the dough to a 16" circle or a 15x11" rectangle.

10Place dough in a greased deep dish at least 2 inches deep.

11Spread the sauce over the top of the dough. Then sprinkle the cooked pork over the sauce.

12Arrange mushrooms, green pepper, and onion over the sausage.

13Sprinkle cheese on top.

14Bake at 425 degrees F for 20 - 25 minutes until the edges are crisp and golden brown and the cheese is melted.
