Needed something quick to make and put this together fast. Note: You may need to add a bit more water about an hour into cooking you'll have to have a look and see how its going.

Ingredients For cathys rice a roni and chicken casserole

  • 2 box
    herb butter rice a roni
  • 1 pkg
    chicken noodle soup
  • 1/2 c
    orzo pasta
  • 1 can
    mushrooms
  • 1/2 pkg
    frozen veggies (carrots, celery, onion)
  • 1/4 c
    leeks (optional to sautee or put in raw)
  • 1 sm
    shallot (optional to sautee or put in raw) or handful of dried shallots
  • 1 can
    water chestnuts
  • 1 sm
    onion (optional to sautee or put in raw) or handful of dried onions
  • 2 c
    cooked chicken diced
  • 1 can
    cream of mushroom soup
  • 1 1/2 can
    milk of your choic
  • 1 1/2 can
    water

How To Make cathys rice a roni and chicken casserole

    Preheat oven 375
  • 2
    Spray a baking dish (9x13) and add everything except cream of mushroom and milk and water.

    Mix everything well.

    Add cream of mushroom on top and spread it evenly over the top.

    Add 1 1/2 cans of your choice milk. Add 1 1/2 cans water

    You can add some shredded cheese if you'd like or leave it off...
