I've been making this casserole for many years and it's always a welcome meal. It's easy and tasty.

Ingredients For brocolli and rice casserole

  • 2 c
    instant rice (i prefer uncle ben's. regular rice wont work for this recipe)
  • 2 c
    water
  • 1 pkg
    frozen brocolli crown cuts
  • 3/4 lb
    fresh sliced button mushrooms
  • 2 can
    cream of mushroom soup, undiluted
  • 1/2 stick
    butter or margerine
  • 12 oz
    jar of cheeze whiz
  • salt to taste
  • 2 Tbsp
    butter or margerine

How To Make brocolli and rice casserole

  • 1
    Place instant rice and water in 3 quart casserole dish. Salt to taste. Dot with butter or margerine.

    Top with one can of the mushroom soup.
  • 3
    Layer the broccoli and sliced mushrooms evenly over previous ingredients.
  • 4
    Add the 2nd can of mushroom soup over the broccoli and mushrooms

    Top with the Cheese Whiz, spread evenly.

    Cover and bake in preheated 375F degree oven for about 45 minutes. Remove cover and bake for about 15 more minutes or until cheese starts to brown.

    Serve and enjoy.
