This was my first time ever making black eyed peas. I love this recipe. This would taste good with a crusty loaf of French bread.

Ingredients For black eyed pea gumbo

1 Tbspolive oil

1onion, chopped

1green bell pepper, chopped

5stalks celery, chopped

5-6 cchicken broth
-
1 cbrown rice
-
4 canblack eyed peas or 1 lb cooked & salted

1 candiced tomatoes and green chilies

1 candiced tomatoes

2-3 clovegarlic minced

1 lbslilced & browned turkey sausage, opt
How To Make black eyed pea gumbo

1Cook the onion, pepper, and celery in olive oil until tender

2Pour in the chicken broth & mix in rice, black-eyed peas, diced tomatoes & green chilies, diced tomatoes, & garlic.

3Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender

4Add water if soup is too thick
