big ole bill's red beans and rice
I love Cajun cooking, and this is one of my favorites along with jambalaya and gumbo.

Ingredients For big ole bill's red beans and rice

1 lbdry red kidney beans

1 lgchopped onion
-
2 lgcelery stalks chopped

1chopped green bell pepper
-
1/4 colive oil
-
2 Tbspminced garlic
-
2whole bay leaves
-
6 cwater
-
1/4 tspdried sage
-
1 tspdried thyme
-
1 Tbspdried parsley
-
1 Tbspcajun seasoning
-
2 lbandouille sausage sliced
-
salt and pepper to taste

long grain rice
How To Make big ole bill's red beans and rice

1Rinse the kidney beans in a strainer. Put them in a bowl and cover with water. Let them soak overnight.

2Heat the oil in a skillet on medium heat, and then add the celery, garlic, bell pepper and onion to the pan. Continue to cook for about five minutes until the vegetables are slightly softened. Set aside.

3Rinse and drain the beans. Put them in a large pot with 6 cups of water. Add the vegetable mixture you just fried to the pot.

4Add the bay leaves, thyme, sage, Cajun seasoning, and parsley to the pot. Bring to a boil and then reduce to simmer. Cook for two hours uncovered.

5Add a small amount of salt and pepper to taste. Stir the sausage into the pot and simmer for an additional 30 minutes.

6While it simmering, cook your rice according to package directions. I personally like jasmine rice, but any type will work including white and brown.

7Serve the beans and sausage dish over the rice.
