4 lgportobello mushrooms

4 Tbspolive oil

2 clovegarlic

3 Tbspfresh basil

2 mdslicing tomatoes, ripe but firm

4 slicemozzarella or swiss cheese

salt & pepper to taste

2 mdshallots

1 Tbspblack pepper

1-1/2 tspkosher salt

1 Tbspfresh basil or parsley

1/2 cbalsamic vinegar

1 colive oil
How To Make 'bello of the ball (sallye)

1BALSAMIC SHALLOT MARINADE PREPARATION: Finely mince shallots and basil (or parsley) Whisk vinegar and olive oil together until melded Add salt and pepper Add minced shallots and basil Continue whisking until ingredients are well blended Set aside

2MUSHROOM PREPARATION: Preheat oven to 400º F Preheat grill or large heavy (cast iron is best) skillet to medium high heat Line baking sheet with parchment paper & set aside Finely mince peeled garlic cloves and basil Transfer to shallow mixing bowl Add olive oil, herbs de provence, salt and pepper to bowl and whisk until well blended Set aside

3Stem the mushrooms and wipe mushroom caps clean with peper towel Brush oil/herb mixture generously over both sides of mushroom caps Grill the mushrooms for 6-8 minutes per side Remove from heat and place on lined baking sheet

4Slice tomatoes into 1/4" thick slices Place 2 or 3 slices of tomato on each mushroom Cover tomatoes with a slice of cheese Place baking sheet in preheated oven and cook until cheese is melted and bubbly

5Remove to serving plates and drizzle marinade over each entire mushroom (be generous) Best served immediately while still hot

6These can also be served on toasted buns as "hamburgers" for vegetarian diners Just garnish them like regular burgers.
