Ingredients For beef tongue with raisin sauce

1freash beef tongue
-
3 smonoins, cut into wedges
-
2 smcarrots, cut into pieces
-
4stalks celery and leaves
-
6spigs parsley
-
8peppercorns
-
salt & pepper

1/2 calmonds blanched and split

2/3 cseedless raisins
-
6 Tbspcooking fat
-
3 Tbspflour
-
1/4 ccrushed ginger snaps

1lemon, cut into small cubes
How To Make beef tongue with raisin sauce

1Wash tongue and place in a kettle with enough water to cover. Simmer 2-2 1/2 hours until barely. Remove from kettle peel off the skin and trim well.

2Place tongue back in kettle with onions, carrots, celery, and parsley. Add water to cover.

3Add peppercorns, and salt. Simmer gently until tender 3 to 5 hours. Drain, RESERVE LIQUID.

4Melt fat and add flour stir until blended.

5Gradually stir in reserved raisin and almond liquid and enough tongue liquid to make 3 cups in all.

6Add gingersnaps, almonds, raisins and lemon cubes. Season with paprika. Pour over sliced tongue. Serve hot
